Summer Treat: Sangria


Ingredients: 
2 bottles chilled dry red wine
1 cup brandy
1 cup orange juice
1/4 cup superfine granulated sugar
2 oranges, cut into thin rounds
2 lemons, cut into thin rounds
3 Key Limes, cut into thin rounds 
2 apples, cored & cut into 1/2-inch chunks
2 cups chilled club soda

Directions:
In a large bowl, combine the wine, brandy, OJ, & sugar.  Stir until the sugar dissolves.  Add the sliced fruit and refrigerate until well chilled (about an hour).  Remove and add soda.  Serve over ice.

recipe : grilled granola & peanut butter sandwich.

I love when I find things that are easy to make.  I am not much of a chef, but I do love to cook at home... after all it's way easier and cheaper to simply whip something together instead of going out to eat all the time. 

Recently I have been trying to eat healthier.  As a college student I have found it difficult to eat healthy when cooking for one.  I mean, it always seems more convenient to simply run through a drive-thru or grab a bite on campus after class, but one of my new goals is to cut back on the amount of junk food that I eat.  So in the spirit of eating healthy I decided to make this simple grilled granola and peanut butter sandwich. 

 

 Ingredients:

Bread
Peanut Butter
Granola
1 Banana
Honey

recipe : apple and brie melt.

This week I have really been in the mood to cook and try new recipes.  So, this is my second Pinterest recipe post this week.

Ingredients:

 

4 slices of Italian bread, about 1/2" thick
1 large apple, thinly sliced
4 oz brie, thinly sliced
2 T apple butter
1 T butter




I used white bread instead of French bread...so it kinda fell apart when I tried to eat it.  But, it tasted just as good either way!  The brie with the apple and apple butter was very good, but I also think you could try other types of cheese too... I might experiment with that, so I'll let you know.

recipe : chicken enchiladas.

For dinner last night Mom and I made Chicken Enchiladas from Pinterest.  The entire meal took about 25-30 minutes.  They were pretty simple, yet yummy!

Ingredients:

 

10 soft taco shells
2 cups cooked, shredded chicken
2 cups shredded Monterey Jack cheese
3 Tbsp. butter
3 Tbsp. flour
2 cups chicken broth
1 cup sour cream
1 (4 oz) can diced green chillies

Instructions:

  1. Preheat oven to 350°
  2. Grease a 9x13" pan
  3. In a sauce pan, melt butter, stir in flour and cook for 1 minute.  Add broth and whisk until smooth.  Heat over medium heat until think and bubbly.
  4. Stir in sour cream and green chilies.  Do not bring to a boil (otherwise the sour cream will curdle).
  5. Pour over enchiladas and top with remaining cheese.
  6. Bake for 22 minutes and then under high broil for 3 minutes to brown the cheese.

After cooking the sauce for 1 minute it was still thin, so we added an extra tablespoon of butter and flour.
